Cauliflower and Chickpea Masala

Delicious Vegetarian Masala.


  • 2 tbsp. garam masala

  • 1/2 tsp cumin, turmeric, smoked paprika

  • 1/4 tsp cayenne

  • 1/2 tsp salt and pepper

Skillet Ingredients:

  • 1 yellow onion

  • 3 cloves garlic 

  • 1/2 tbsp. grated fresh ginger

  • 1 bag of cauliflower florets

  • 1 15 oz. can chickpeas, drained

  • 1 15 oz. can tomato sauce

  • 1/4 cup of water

  • 1/3 cup of coconut milk / heavy cream

  • Chopped Carrots (Optional)

  • Salt for taste.


  • In a small bowl combine the masala ingredients.

  • Fine chopped onions, mince garlic, and grate ginger. Add these ingredients in a skillet with olive oil to sauté on medium heat until onions are soft and translucent.

  • Add spice mix and continue to sauté for one more minute.

  • Add the cauliflower florets , continue to cook.

  • Add can of chickpeas and tomato sauce and water to the skillet. Turn heat down to medium low heat and cook for another 15 minutes.

  • Cook rice (optional). Follow packaging instructions.

  • Turn off heat and add the cream and stir.

  • Serve in a bowl over rice.
