Delicious Vegetarian Masala.
2 tbsp. garam masala
1/2 tsp cumin, turmeric, smoked paprika
1/4 tsp cayenne
1/2 tsp salt and pepper
1 yellow onion
3 cloves garlic
1/2 tbsp. grated fresh ginger
1 bag of cauliflower florets
1 15 oz. can chickpeas, drained
1 15 oz. can tomato sauce
1/4 cup of water
1/3 cup of coconut milk / heavy cream
Chopped Carrots (Optional)
Salt for taste.
In a small bowl combine the masala ingredients.
Finely chopped onions, minced garlic, and grated ginger. Add these ingredients in a skillet with olive oil to sauté on medium heat until onions are soft and translucent.
Add spice mix and continue to sauté for one more minute.
Add the cauliflower florets, continue to cook.
Add a can of chickpeas and tomato sauce and water to the skillet. Turn heat down to medium-low heat and cook for another 15 minutes.
Cook rice (optional). Follow packaging instructions.
Turn off the heat and add the cream and stir.
Serve in a bowl over rice.
