Chickpea Shawarma Salad

Vegetarian Mediterranean flavor salad ideal for dinners and lunches.


Ingredients:

  • 3 cups canned/cooked chickpeas

  • 2 tbsp. olive/avocado oil

  • 1 tbsp. lemon juice

  • 1 tsp cumin

  • 1/2 tsp coriander, garlic powder, cardamom,

  • ginger, cinnamon, cayenne/red pepper flakes.

  • Combine ingredients, roast them in pan at

  • 350 degrees. Once cooked allow to cool.

For the Salad:

  • 1 cup chopped kale (olive oil massage)

  • 1/4 cup diced cucumber, tomatoes, finely

  • chopped parsley and few pickled red onions.

  • Massage oil into Kale.

Instructions:

  • 2 tbsp. hummus

  • 1/2 lemon Juice

  • Mix ingredients.

Combine all the ingredients into a salad bowl and serve.
