Roasted Sweet Potato Quinoa Salad

Healthy quinoa and roasted sweet potato salad with a light cumin and lime dressing. Perfect for a meal or a side.


  • 1.5 lb. sweet potatoes

  • 2 tbsp. Olive Oil

  • 1/2 tsp salt

  • 1/2 tsp cumin

  • 1/4 tsp black pepper

  • 2 cups cooked quinoa

  • 15 oz. can black beans

  • 15 oz. corn kernel

  • 1 small red onion chopped.

Dressing Ingredients:

  • 4 tbsp. olive oil

  • 3 tbsp. lime juice

  • 1/4 tsp ground cumin, kosher salt, ground paprika, black pepper, or chili powder

  • 1 tsp minced garlic.


  1. Cut peeled sweet potatoes into 1" pieces. In a pan drizzle olive oil over potatoes

  2. Season with salt, pepper, and cumin. Toss gently to coat.

  3. Roast for 20 to 23 minutes at 400 degrees.

  4. Remove from oven and cool.

  5. In a large salad bowl, combine corn, black beans, chopped red onion, quinoa, and sweet potatoes.

  6. In a separate bowl, whisk together all the dressing ingredients.

  7. Pour over salad and gently toss.

  8. Serve right away or cover and store in the fridge for up to 4 days.
