Roasted Sweet Potato Quinoa Salad

Healthy quinoa and roasted sweet potato salad with a light cumin and lime dressing. Perfect for a meal or a side.


  • 1.5 lb. sweet potatoes

  • 2 tbsp. Olive Oil

  • 1/2 tsp salt, cumin

  • 1/4 tsp black pepper

  • 2 cups cooked quinoa

  • 15 oz. can black beans

  • 15 oz. corn kernel

  • 1 small red onion chopped.

Dressing Ingredients:

  • 4 tbsp. olive oil

  • 3 tbsp. lime juice

  • 1/4 tsp ground cumin, kosher salt, ground paprika, black pepper or chili powder

  • 1 tsp minced garlic.


  • Cut peeled sweet potatoes into 1" pieces. In a pan drizzle olive oil over potatoes

  • Season with salt, pepper and cumin. Toss gently to coat.

  • Roast for 20 to 23 minutes at 400 degrees.

  • Remove from oven and cool.

  • In a large salad bowl, combine corn, black beans, chopped red onion, quinoa and sweet potatoes.

  • In a separate bowl, whisk together all the dressing ingredients.

  • Pour over salad and gently toss.

  • Serve right away or cover and store in fridge for up to 4 days.
