Simple Salad

This simple salad is fresh, quick, and easy to modify! Great with lunch or as a side for dinner. Pairs nicely with fish like salmon or tilapia. Also wonderful when topped with feta cheese! 


  • 1 cucumber, diced 

  • 1 large beefsteak tomato OR 2 Roma tomatoes, diced  

  • 1 lemon, juiced 

  • 2 tbsp. olive oil 

  •  Fresh herbs of your choice (dill, thyme, parsley, etc.), chopped


  1. Mix all ingredients together and enjoy!
