A full bowl of veggies from a Slow Cooker. A little preparation in the morning can make your dinner time easy, delicious, and nutritious.

INGREDIENTS:
1 large onion diced
2 cloves garlic minced
2 medium carrots chopped
3 stalks celery chopped
1/2 medium zucchini chopped
1/2 medium head of cabbage thinly sliced
1 can diced tomatoes
1/2 teaspoon chili powder
1/2 teaspoon smoked paprika
1 teaspoon Italian seasoning
1/4 teaspoon red pepper flakes
3/4 teaspoon dill
6 cups vegetable stock
1 can green beans or use frozen cut green beans.
INSTRUCTIONS:
Add all the prepared ingredients to your slow cooker except for the green beans.
Stir well to combine.
Cook on high for 4-5 hours or on low for 6-8 hours.
Add the green beans about 30 minutes before the end of cooking and stir well.
Serve with some fresh chopped parsley.
Add a dollop of sour cream (if desired).
