Slow Cooker Veggie Soup

A full bowl of veggies from a Slow Cooker. A little preparation in the morning can make your dinner time easy, delicious and nutritious.


INGREDIENTS:

  • 1 large onion diced

  • 2 cloves garlic minced

  • 2 medium carrots chopped

  • 3 stalks celery chopped

  • 1/2 medium zucchini chopped

  • 1/2 medium head of cabbage thinly sliced

  • 1 can diced tomatoes

  • 1/2 teaspoon chili powder

  • 1/2 teaspoon smoked paprika

  • 1 teaspoon Italian seasoning

  • 1/4 teaspoon red pepper flakes

  • 3/4 teaspoon dill

  • 6 cups vegetable stock

  • 1 can green beans or use frozen cut green beans.

INSTRUCTIONS:

  1. Add all the prepared ingredients to your slow cooker except for the green beans.

  2. Stir well to combine.

  3. Cook on high for 4-5 hours or on low for 6-8 hours.

  4. Add the green beans about 30 minutes before the end of cooking and stir well.

  5. Serve with some fresh chopped parsley.

  6. Add a dollop of sour cream (if desired).
