This smoothie is filled with a little naughty and nice. Delicious and rich and healthy too, that is right - think Cauliflower. gut heal.
3 pitted large Medjool dates (¼ cup packed pitted Medjool dates)
1 cup unsweetened almond milk (or sub-light coconut milk), plus more to thin smoothie if necessary
¾ cup frozen cauliflower
1 1/2 tablespoons cacao powder
1 tablespoon tahini (or sub chocolate tahini or chocolate almond butter)
½ teaspoon vanilla extract
⅛ teaspoon peppermint extract
Pinch of sea salt
1 shot of Bailey’s cream, Peppermint Schnapp’s or Kahlua
1 teaspoon espresso powder
1 scoop your favorite protein powder
1 tablespoon flaxseed meal
1 cup spinach
¼ cup gluten-free rolled oats
Soak your pitted dates in 1 cup of HOT water for at least 5 minutes. This will help them soften up to help when blending.
Next, add all ingredients to a high-powered blender: pitted (soaked) dates, almond milk, frozen cauliflower, cacao powder, tahini, vanilla, and peppermint extract, and a pinch of salt. Feel free to add any optional add-ins to your smoothie if you’d like.
Blend until smooth, adding more almond milk to thin, if necessary.
Pour into a glass and enjoy!
