Sweet Potato Brownies

The easiest healthiest dessert out there. Paleo-friendly- Gluten Free - Dairy Free.

And veggies 'hidden' in a brownie. Win! Win!


INGREDIENTS:

  • 3/4 cup cooked and mashed sweet potato

  • 1/4 cup coconut oil, melted

  • 1/4 cup nut butter

  • 1/4 cup honey/maple syrup

  • 2 eggs

  • 3/4 cup cacao powder

  • 1/4 cup coconut flour

  • 1 tsp vanilla

  • 1/4 teaspoon salt

  • 1 teaspoon cinnamon

  • 1/2 cup chocolate chips + extra for topping

INSTRUCTIONS:

  1. Preheat your oven to 350℉ and line a square baking pan with parchment paper. Set aside.

  2. Combine all of the ingredients in a mixing bowl; except the chocolate chips. Mix together until the batter is smooth.

  3. Let the batter sit for 5 minutes so that the coconut flour can absorb the wet ingredients.

  4. Fold in chocolate chips.

  5. Spread in lined pan.

  6. Sprinkle extra chocolate chips on top (optional).

  7. Bake for 30-35 minutes

  8. Let the brownies completely cool (about 1-2 hours) before slicing. The longer they cool, the more they will firm up.

  9. Store leftovers in an airtight container in the fridge or freezer!
