Sweet Potato Brownies

The easiest healthiest dessert out there. Paleo friendly- Gluten Free - Diary Free.

And veggies 'hidden' in a brownie. Win! Win!


Ingredients:

  • 3/4 cup cooked and mashed sweet potato

  • 1/4 cup coconut oil, melted

  • 1/4 cup nut butter

  • 1/4 cup honey/maple syrup

  • 2 eggs

  • 3/4 cup cacao powder

  • 1/4 cup coconut flour

  • 1 tsp vanilla

  • 1/4 teaspoon salt

  • 1 teaspoon cinnamon

  • 1/2 cup chocolate chips + extra for topping

Instructions:

  • Preheat your oven to 350℉ and line a square baking pan with parchment paper. Set aside.

  • Combine all of the ingredients in a mixing bowl; except the chocolate chips. Mix together until the batter is smooth..

  • Let the batter sit for 5 minutes so that the coconut flour can absorb the wet ingredients.

  • Fold in chocolate chips.

  • Spread in lined pan.

  • Sprinkle extra chocolate chips on top (optional).

  • Bake for 30-35 minutes

  • Let the brownies completely cool (about 1-2 hours) before slicing. The longer they cool, the more they will firm up.

  • Store leftovers in an airtight container in fridge or freezer!
